I think it is fair to say most of us are in a love affair with cheese – maybe even my lactose-tolerant friends with some Lactaid. Macaroni and cheese, pizza, burrata, cheeseburgers, Philly cheesesteaks, cheesy bread and baked brie are just a few of the cheese dishes that come to mind. Grilled cheese, however, brings a flurry of nostalgia and warmth to mind every single time I think of it.
Just in case you needed a reminder. Tell me you don’t feel immense love. How can you not?
So when I heard there was an awesome grilled cheese spot in Prospect Heights, I had to check it out. Mrs. Dorsey’s Kitchen (MDK) is affectionately named after the owner Ron’s grandmother a.k.a. Mrs. Dorsey. This gem on Washington Avenue gave me all the feels with their cheesy concoctions, and quickly won me over with the chalkboard bar and upstairs loft seating. MDK reminded me just how versatile grilled cheese can be. By elevating classic combinations to mouth-watering levels, MDK effortlessly blows the traditional Kraft American cheese sandwich of your childhood out of the water…
4. The Club: roasted turkey, rendered bacon, smoked gouda, fresh spinach and cherry tomatoes
3. Eggplant Parm: grilled Eggplant Parmesan, mozzarella, Parmesan cheese and diced onions
2. Buffalo chicken grilled cheese sandwich on a pretzel bun
1. Jerk Chicken: cheddar cheese, thin-sliced avocado and jerk sauce
Pro Tip: If you’re undecided, ask Ron for some suggestions on or off the menu. By striking up some conversation, we experienced some delightful creations like the below. MDK also has a serious arsenal of sauces. Ask about them.

BrklynHospitality’s Quick & Dirty: 4/5. I’m not ashamed to say grilled cheese is arguably perfect for any meal of the day…at least in my book. If it’s busy, there might be a bit of a wait. Nevertheless, make sure you swing by MDK to check out the array of grilled cheese greatness as well as some stellar macaroni & cheese, bread pudding and even a salad.
